A tasty recipe for young and old that comes straight from the Mediterranean.


  • For a soup:
  • 1 cube of chicken broth
  • 1 C. rounded rice soup
  • 1 egg
  • the juice of half a lemon
  • 2 fresh mint leaves.


Pour 1 half-liter of water and the bouillon cube into a saucepan, then bring to a boil. Rinse the rice and throw it in the broth. Cook it 20 min. In a bowl, whisk together the egg, lemon juice and two spoonfuls of hot broth. Pour over the simmering (but not boiling) broth and continue to whisk until thick. Serve decorated with finely chopped mint leaves.
